Which stove accessories actually matter?

Why do I need a moisture meter?
Because wet wood is the most common cause of a poor, smoky fire and a dirty flue. A moisture meter tells you whether a log is dry enough to burn clean before you put it in, which no amount of judgement by eye reliably does.
What does a stove thermometer do?
It shows the operating temperature so you can keep the stove in its efficient range. Run it too cool and you build creosote; run it too hot and you waste wood and stress the appliance.
